Feta Cheese Salad
Yield: 4 servings
1 head Boston lettuce
2 mini cucumbers, cut in half lengthwise, and then cut into bite-sized diamonds
2 scallions, finely sliced
5 Roma tomatoes, ripe, seeded, and then cut into strips
16 black olives, pitted & cut into halves
½ cup feta cheese, cut into bite-sized dices
50 ml extra virgin olive oil
10 ml fresh lime juice
10 ml chopped fresh cilantro
Salt, and freshly ground black pepper, to taste
- Wash and drain the salad leaves. Shred the leaves and arrange them in the bottom of a large salad bowl. Add the cucumber, scallions, tomatoes, and olives.
- Cut the cheese into medium cubes, then transfer to the salad bowl, mix gently.
- Combine the dressing ingredients in a mixing bowl, mix well until thoroughly combined, season with salt and freshly ground black pepper.
- Drizzle the dressing over the salad and serve immediately.
