Feta Cheese Salad

Feta Cheese Salad

Yield: 4 servings


1 head Boston lettuce

2 mini cucumbers, cut in half lengthwise, and then cut into bite-sized diamonds

2 scallions, finely sliced

5 Roma tomatoes, ripe, seeded, and then cut into strips  

16 black olives, pitted & cut into halves

½ cup feta cheese, cut into bite-sized dices



50 ml extra virgin olive oil

10 ml fresh lime juice

10 ml chopped fresh cilantro

Salt, and freshly ground black pepper, to taste



  1. Wash and drain the salad leaves. Shred the leaves and arrange them in the bottom of a large salad bowl. Add the cucumber, scallions, tomatoes, and olives.
  2. Cut the cheese into medium cubes, then transfer to the salad bowl, mix gently.
  3. Combine the dressing ingredients in a mixing bowl, mix well until thoroughly combined, season with salt and freshly ground black pepper.
  4. Drizzle the dressing over the salad and serve immediately.
